In Palate restaurant, Iain Todd, the Executive Chef has ensured innovative dining does not compromise the true flavours of the freshest local produce.

From breakfast through to a gourmet degustation or a la carte dinner, guests can customise their dining experiences to suit all tastes and schedules. All guests can restore their wellbeing in the premium spa facilities and on-site gym. Soothe the busy mind and refresh the soul with a luxurious treatment in one of Spa Saffire’s three retreat rooms overlooking the inspiring landscape and reflective pools. Treatments have been designed exclusively for Saffire by La Gaia and Payot, and hot stone massages with granite from the Freycinet Hazards Mountains are a unique, stand-out feature.

ACCOMMODATION

All Saffire’s 20 suites are luxuriously appointed, featuring the best in design and furnishings and capturing the unique nature of the surrounding coastline. The suites are designed to provide guests with the utmost privacy while taking in the magnificent views of the Hazards Mountains, crystal-clear blue waters and white sandy beaches.

These suites are designed to relax and rejuvenate, indulge in reading and lazing the days away, and to encourage guests to connect with the environment to heal and restore balance.

FOOD & WINE

Tasmania’s East Coast boasts some of the cleanest air and water in the world, and has attracted farmers of the land and sea (including its original Aboriginal inhabitants) for tens of thousands of years. Today, it is home to a thriving combination of aquaculture and agriculture, with fine food and wine produced right on Saffire’s doorstep. The climate, reminiscent of the south of France, produces stunning, flavourful cool-climate wines such as chardonnay, pinot noir and deeply layered sparkling wines that have won international acclaim.

Plump, succulent oysters are farmed practically on Saffire’s doorstep in the pristine waters of Great Oyster Bay. And nearby, enterprising mussel farmers have created the world’s first commercial mussel hatchery at Spring Bay. Saffire’s chefs source the best of Tasmania’s succulent grass-fed beef and lamb, full-flavoured game meats, fresh herbs and spices and seasonal fruit and vegetables. Executive chef and Tasmanian local, Iain Todd, has a reputation for integrity and passion for quality local produce. Iain delights in tailoring menus and dining experiences for Saffire’s guests.

From recreating a favourite dish to campfire dining, to multi-course degustation menus expertly matched with wines, Iain is committed to enhancing every dining experience. He will even pass on his culinary secrets in private cooking classes. Saffire’s restaurant, Palate, prides itself on showcasing the best Tasmania has to offer, and provides tailor-made experiences to suit all guests. From early morning to late evening, food innovation in the kitchen aims to bring out the true flavours of home-grown produce.

EXPERIENCES

With the Freycinet National Park on the doorstep, there’s a world of deserted islands, wild bushland and secluded beaches to explore from Saffire. Saffire has developed a range of activities to suit all ages and interests, from bushwalks to gourmet picnics in remote locations and quad biking through the national park. Included in all Saffire accommodation bookings is a broad range of activities offering innovative options for all styles of travelers and moods.

From 1 hour to 3 hours, these activities offer the opportunity for guests to engage and connect with this stunning location. From adventure to romance, rejuvenation to exploration the Saffire range of activities add greater depth and dimension to a visit to Freycinet.

– Experience the contrast between wetland ecology and the massive life of the Tasman Sea on a Quad Bike excursion.

– Slip on waders and take a walk into the secret life of oysters and mussels at Freycinet Marine Farm.

– Don a jacket and spend an hour with Saffire’s renowned Chef to learn the methods behind some innovative “two hat” culinary delights. Tastings essential!

– Learn the secrets behind the sweetness in an unforgettable Beekeeping Experience. Dress in a full-body apiarist suit and venture into Saffire’s private apiary, with hives overlooking the Hazards Mountains and witness the breathtaking natural phenomenon of honey-making by Tasmanian bees.

– Venture out on mountain bikes on a specially devised interpretive route or, for those wanting a longer and more technical adventure book one of the Saffire guides to tackle the much more rugged track from Cape Tourville.

– Fringing Saffire is a variety of seemingly untouched pockets of paradise amongst gorgeous coastal reserve. For those “in the know” of minimal impact techniques, these places can be the ideal setting for a gourmet picnic “for two” hamper. Absorb the magical atmosphere of the distant Hazards while enjoying quality Tasmanian fare.

– The Saffire Tasmanian Devil Experience offers you the rare opportunity to encounter Tasmanian devils in a natural setting, and to participate in the quest to save this endangered species from extinction.

Designed for guests to deepen their East Coast discovery, Saffire’s Signature Experiences are not included in the accommodation rate, but can be purchased prior to or upon arrival. The Schouten Island Experience, exclusive to Saffire guests, is a unqiue journey to a harsh and unforgiving place, yet a place so fertile that people have been drawn there for thousands of years.

Schouten Island’s vast and abundant eco-system has played a part in early Aboriginal settlement, and farming, mining and fishing in the area. Now, it is part of the Freycinet National Park, a rarely explored, wild, unpredictable, delicate and unforgettable place both above and below the sea.

GETTING THERE

Saffire Freycinet is located 2.5 hours’ drive from the major cities of Hobart and Launceston. Although allowing three hours for a comfortable drive is recommended.

Travelling from Hobart, take the Tasman Highway (A3) to Sorell and continue up the east coast through Orford and Swansea. Still travelling north along the Tasman Highway (A3) the Coles Bay turn-off (C302) is to your right. The turn-off is very well signposted, but it can come upon you quickly.  Saffire is about 25km along the Coles Bay Road on your right.

If you are heading to Saffire from Launceston, take the Midland Highway (A1) to Campbelltown and turn left onto the B34 heading towards Lake Leake. Continue along the B34 until you reach the Tasman Highway (A3). Turn left, heading north along the coast until you reach the Coles Bay turn-off (C302 – about 10km). Saffire is on the right about 25km along the Coles Bay Road.

Driving at night, especially around dawn and dusk can be hazardous as the wildlife is abundant at those times. Caution should be taken at any time however.

Air transfers to Saffire are available by both Fixed Wing and Helicopter from Hobart. Plus, Fixed Wing Aircraft Transfers – ex Melbourne or Sydney can be arranged, starting from $4500. Please contact the Guest Services team for rates.

The landing strip is located at Friendly Beaches, a short 10 minute drive from the Lodge. Saffire Guest Services team would arrange transfer to and from Saffire to meet connections.  Travel times to and from Hobart are approximately 40 minutes by air. 

Saffire can also arrange a Fly Drive package where guests would be met on arrival at Friendly Beaches by a premium hire vehicle. This gives guests the best of both worlds, arrival by a scenic Helicopter Transfer and the freedom of their own vehicle.
